To be called Bourbon, a spirit must comply with US law. Bourbon is a type of Whiskey that must be made from at least 51% corn, usually a corn component of about 65% to 75% of the liquor. There is also a legal aging period of 2 years in new white oak barrels, the inside of which is charred. The use of new oak barrels, which gives Bourbon a large part of its flavor, was not actually used for taste reasons, but rather as a way to help the economy of less developed, heavily forested areas (such as Arkansas) in the early 20th century. Bourbon Whiskey matures in just a few years thanks to the new wood of the barrels and the climate of the production area. The name comes from Bourbon County in Kentucky.
